This is a ramen shop run by a junior of mine from martial arts. I was surprised at first to hear he'd never trained at a ramen shop, but when I actually tried it, it was genuinely good. The soup is carefully made too — a well-balanced ramen with real richness that you can still drink to the last drop. The interesting thing about this shop is Friday and Saturday nights. Besides ramen, they also serve side dishes, so it takes on the vibe of a ramen izakaya where you can enjoy things over a light drink. When I went, the regulars were having a good time with beers in hand, and the shop has counter seating only. The distance is such that conversations with the customer next to you start naturally, and it was a very comfortable space. I can recommend this shop both to people who want to properly enjoy ramen and to people who want to "have a drink and finish off with some delicious ramen.

Chuka Soba Minawa@Higashi-Akiru [Limited] Seabura Niboshi Ramen ¥1000, Negi-Cha Don (with raw egg) ¥400 "Chuka Soba Minawa," right by Higashi-Akiru Station in Akiruno City. Hachioji ramen seems to be the main thing, but the menu is extensive, with "hiyashi" (chilled), "shoga" (ginger), "aesoba," and more. This day I had the seabura niboshi ramen, limited to April, May, and June. A niboshi soup with solid umami and loads of back fat❗️The back fat, full of umami and richness, is very high quality, and together with the fragrant, mellow kaeshi it makes for a very refined finish❗️The noodles paired with it are chewy, bouncy, wavy flat noodles with outstanding texture❗️ The chopped onion and bara nori are flavorful too, and the chashu is meaty and delicious❗️ Even as a limited menu item, it was a seabura niboshi ramen with a very high level of polish. The Negi-Cha Don with raw egg, combining green onion fragrant with sesame oil and diced chashu, was also delicious. I'm curious about the other menu items too, so I'll definitely be back. Thanks for the meal♪

Ramen shop 05062 2026/8 Besides the spot next to the shop, there's also parking a little to the west. (Photos 6, 7, 8) I had the Chuka Soba regular ¥900 (shoyu)★★★★ + Negi-Cha Don without egg ¥300★★★*. The soup is unique, like a blend of animal-based and seafood-based broths (my personal impression). Kind of like a hearty niboshi soup?

Today's bowl: I savored the classic chuka soba (shoyu). For the noodle choice, I went with the flat noodles without hesitation. They slide down smoothly and cling perfectly to the soup. The soup is a double soup of animal and seafood broths. It tastes light, but thanks to the thick layer of oil on the surface, it stays piping hot to the end, which is a nice plus! You can really taste the depth of the soy sauce too. However, the seafood aftertaste lingers fairly strongly toward the end, which may divide opinions a bit. But the red onion topping does a great job! It cuts the characteristic odor and adds a refreshing accent. The chashu is simple with a reliable finish. Thanks for the piping hot bowl!

First visit on a Saturday at lunchtime. A one-man operation run by a rather gruff-seeming owner. The ramen was tasty. An animal-based ramen, like pork bone and chicken bone, with a seafood kick. The flat noodles, which seemed homemade, were good too. Taste-wise it's about ☆4.5. As I said, the service is a bit... you know, so overall I'd say ☆4. It's not bad, though. These days unfriendly service is actually the rarer thing. Well, all in all, I think it's a place I'd want to come back to. According to a regular sitting next to me, the curry here is apparently good. Next time I come, I want to try ordering the curry.
