一発屋 博多長浜ラーメンIppatsuya Hakata Nagahama Raamen
With the behavioral norm of "staying loyal to the basics, doing the obvious things obviously", we make zero compromises on taste. All our ramen is made in-house. We use round bones (genkotsu), loin bones, and fresh, "raw" chicken frames sourced from Takatsuki's long-established "Tsuraya". These are slowly simmered for 7 to 8 hours to provide a soup that extracts umami to the absolute limit. Soup is a "living thing". Assessing its daily changing state, we carefully finish each and every bowl at the most delicious timing. It has an exceptional affinity with our exclusive thin noodles that exquisitely cling to that soup. Also, [Super Spicy Ramen] based on this tonkotsu soup is one of our popular menus. You can choose your preference of spiciness...

View on GoogleBecause university hospital inpatients visit, they apparently keep the sodium content of the ramen soup low, and it is indeed an easy-to-drink soup. The master's recommended "Nira Tare" (chives sauce) is not spicy, and can be used as a flavor changer according to preference, going exceptionally well with both ramen and fried rice.
View on GoogleI was in the mood for udon, but encountered Hakata ramen and went in without hesitation! It was delicious. I thought, to think there's a ramen shop in a place like this. The fried rice has a taste I like. Putting spicy chives on top doubled the deliciousness! It seemed they used Shimanto pork so I could eat with peace of mind. Next time I want to eat gyoza.
View on GoogleI ordered Jigoku Ramen. Got scared so I went with level 1 spiciness. It was delicious, but lacked sufficient kick. I think level 2 or higher spiciness is better. I wanted to add more spice so I put the chives placed on the table on top, and it was ridiculously delicious.
View on GoogleIt is an independently run tonkotsu ramen shop located within a 3-minute walk from Hankyu Takatsuki-shi Station. Featuring super spicy ramen as a selling point, photos of finishers' faces and empty bowls are decorated on the wall. I had the regular "Hakata Nagahama Ramen" for 900 yen and "Kaedama" (extra noodles) for 130 yen. Below are the characteristics: ◯ Perhaps to accommodate super spicy options, the soup is light and free of quirks, with no tonkotsu odor. For those purely seeking a rich tonkotsu soup, it feels a bit lacking. ◯ The noodles are slightly thin and straight with a normal portion, and boiling firmness is accommodated upon request. ◯ On the table, besides soup dashi, there is "Nira Tare", allowing you to experience a super-spicy style flavor change. For me, it's going to be a ramen shop whose taste I occasionally want to crave 🍜
