Dropped by this restaurant after finding that my favorite jiro-style ramen down the street was closed, and I'm really glad I did! They have all of your typical niboshi ramen types, but they also have a nibo-jiro ramen, which was perfect, because I traveled up here in the mood for jiro ramen. The nibo-jiro ramen had a lot more soup than a typical jiro ramen, but it was unique and very delicious. You never find strong, niboshi soup as an option for jiro ramen, so I was glad I could try it here.

The soup felt really light, and there was a big piece of boiled pork. Can convert to big size for free.

The soup was a little bit salty and oily. I’ll recommend the fried rice, it was good.

At this place pushing niboshi, Nibo-Jiro with soup and without soup (another day) With soup Vegetables contain not only bean sprouts but also cabbage firmly, and if you make it vegetable extra, the amount is quite a lot. The noodles are homemade and are thick noodles with a reserved punch as a Jiro style. Add a niboshi-based soup to this... I'd like to think so, but there's no punch. Punch can't be managed just by garlic. Is this the reason why the outline of the taste is blurred. Without soup A bowl with a great impact from the appearance. This one has a punch overall and is enough even without garlic! Fried onion? Or something, it's gritty until the end, but this is a matter of preference. As a taste, without soup. That being said, since I generally like with soup, it would be nice if there was a taste change for with soup.
