A shoyu ramen shop around 5 minutes from the Ootori station. The place has exceptional ramen with thin but firm noodles. The beef is cut on demand. What I don’t like though is the very quiet but eerie ambiance, but to each his own.

[Raw Soy Sauce Soba] A double soup adding seafood to chicken umami, and raw soy sauce for the tare 🍜 Aromatic, sharp soy sauce overlaps with a solid base soup ☝️ Raw soy sauce has a sharp impression, but wrapped in lard, you could feel softness and strength 🎶 While solid, it was easy to drink and delicious ~ ✨ The thin straight noodles, with a slippery surface and chewy texture when bitten, have a high hydration rate and absorb the soup to dye slightly brown 🤗 The aroma of soy sauce and the umami of the soup ride on the noodles! It was a delicious noodle that was pleasant to slip down ~ 🎶 The toppings include menma, and large, plump, chewy pork chashu 🥩 The menma had a slight peculiarity to it. I ate raw soy sauce at NewYork x NewYork, which won the Grand Prix for soy sauce in Ultimate Ramen AWARD 2023 and salt in 2024, and as expected it was a high-quality chuka soba ✨ My partner was eating the 'Chicken Chuka Soba' so I had them share a bit to compare, and because the oils used in the soup specifications are different, there was a big difference and both were delicious 🎶 It's also nice to be able to choose between the two types of soy sauce ramen depending on your mood 😊 I want to try the salt ramen called Chicken Scallop Soba too ‼️

Had the summer-limited "Hiyashi Chuka" 🍜 Visually vibrant, a dish that whets the appetite just from its appearance. Traditional hiyashi chuka toppings like cucumber, tomato, soft-boiled seasoned egg, mayonnaise, and karashi mustard line up, but the standout feature above all is the presence-packed chashu! The thick-cut chashu with its savory roasted surface lets you firmly feel the umami of the meat and is fully satisfying. By adding the savory meat umami to the refreshing feel of hiyashi chuka, it becomes a highly satisfying bowl. The noodles have a pliable texture unique to homemade noodles, thoroughly chilled with cold water and possessing superb firmness. They coat well with the sauce, making your chopsticks go non-stop even in the hot season. Mixing in karashi or mayonnaise midway adds acidity and richness, changing the flavor. It was a summer-limited menu item feeling the individuality unique to NewYork×NewYork, a bit different from old-school hiyashi chuka!

Lunch on this day was at "Chuka Soba NewYork×NewYork" in Otori, Sakai City. My family and I went to the ramen shop "Chuka Soba NewYork×NewYork" located along the street a little south from the rotary on the east side of JR Hanwa Line Otori Station. I had the "Raw Soy Sauce Soba" with "Egg" topping, the child had the "Tsukemen", and the wife had the "Chicken Scallop Soba". And we also asked for "Juicy Gyoza" and "Clam Rice". Well, This "Chuka Soba NewYork×NewYork" is the 2nd branch of the popular ramen shop "Ramen NewYork×NewYork" located on the west side of Otori Station. Before long, the "Raw Soy Sauce Soba" made its appearance. The "Raw Soy Sauce Soba" has a soup that is a chicken and seafood double soup. Combined with soy sauce tare using raw soy sauce. The noodles are homemade, medium-thin flat noodles. It is said to be "noodles blended with Haruyutaka and Kitahonami, raising the hydration rate for a pliable, chewy, and silky mouthfeel." On top of the noodles were 2 large sliced rare chashu, 3 pieces of menma, a seasoned egg, and finely chopped green onions. The soup where you could solidly feel the richness of raw soy sauce was an excellent ramen. And above all, the flat noodles were the best! The juicy gyoza are steamed gyoza feeling like xiaolongbao. The clam rice was also feeling extremely good 😍😍 The raw soy sauce soba was super delicious ~~~
