I bought 200g from Guatemala's Capetillo Farm. Originally, I liked light-roasted coffee, but it seems Doi Coffee tends to prefer dark roasts. However, since it was the shop's recommendation, I had it roasted to that recommended full-city roast. When it arrived, the beans were uniformly beautiful to an astonishing degree. There was no roasting unevenness, and I thought it was truly artisan craftsmanship. However, when I looked at the color, it was infinitely close to a city roast, so I adjusted the paper drip extraction to match city roast. For aging, I let it rest unopened in a cool, dark place for 7 days from the roasting date (light roast can be drunk from about 10 days of aging, but for dark roast, I think about 3 days is enough). Since I let it rest for 7 days this time, sweet oils were coming out from some of the beans. Wonderful. I used the KONO-style extraction equipment. I adjusted the mesh so that extraction could take place between 2 minutes 30 seconds and 3 minutes with center pours. 15 clicks on Timemore C3, 13g of beans, water at 88 degrees (since I used a Nitori drip cup, I calculated for cooling and made it 89 degrees), 40 seconds of blooming, total 185g (matched to Komeda's cup volume). Extracted in 2 minutes 50 seconds. Drinking it, in a word, it's "black chocolate." The aroma is a traditional dark roast characteristic that is very much "the coffee." Afterward, it's sweet above all else, followed by a weak bitterness chasing after, and finally a cherry sensation arrives. This is wonderful once again.
View on GoogleThe shop I arrived at after searching around because it was my first time trying to brew espresso at home by myself. They roast after you order, so I am satisfied to enjoy fresh beans at home. I plan to order again next time.
View on GoogleI always intend to post a review, but I keep giving up because I transfer the beans into a can and don't know the brand name. This time, Papua New Guinea Wapenamanda. Moderate bitterness, sweetness afterward, little acidity. It was a flavor I liked.
View on GoogleJust one word of surprise. Fragrant beans. Until now, I bought from a different roaster whose owner predominantly offered beans centered on body and bitterness, and I felt it somehow didn't suit my palate, so this time I decided to try Doi Coffee. It suited my palate. It's delicious.
View on GoogleNo astringency is felt, and the roasting aroma is wonderful. Even without opening the pack, just being there, it doesn't lose to the smell of a coffee shop. The taste is light and has depth without being heavy, and it was an aromatic coffee. I like the taste of light roast types and often drink them.
