View on GoogleI went to Shinobuan when I went to the Minoh area for work! The exterior had a Japanese style with numerous samples lined up at the entrance making it easy to imagine what to eat! The seats were floor seating where you had to take off your shoes, but there were small chairs, so I thought even people with bad lower backs could enjoy it at ease! Among the rich menu, I chose the Tendon set (warm soba) for 1,280 yen! The tendon had freshly fried, crispy shrimp and other items intertwined with sweet and salty tendon sauce, which went well with the rice and was delicious! The soba had a light, mild broth that warmed both heart and body!

The ingredients are beautifully and generously arranged with shredded egg, cucumber, fried tofu, tempura bits, and nori seaweed, whetting your appetite just from the look of it. Thick and chewy country-style soba has a solid flavor and superb throat feel. The sweet and savory seasoned fried tofu, crunchy tempura bits, and refreshing cucumber intertwine exquisitely with the broth, keeping the chopsticks moving without getting tired until the very end. Since I made it a large portion, the eating satisfaction was spot on, and I was full and very satisfied. Enjoying it with a sharp change in flavor using chopped green onions and wasabi is also top-notch. This is a bowl I particularly want to recommend for the upcoming hot season. If you are curious, go check it out. 20260405 "Shinobuan", a restaurant I've been coming to for over 30 years now. This time I ordered the large portion of "Hokkaido Oroshi Soba". At this restaurant, the soba itself is delicious anyway. It's said to be Nibachi soba, but the moment it's brought out, the aroma of soba wafts softly, whetting the appetite. Slurping a mouthful, you're impressed by its strong chewiness and smooth throat feel. The flavor is firmly alive, and you can feel the artisan's commitment. The grated yam and coarse grated radish toppings are also an amazing match. Pouring the bonito broth with a sharp kick over it, mix it roughly and enjoy. The mellowness of the grated yam, the crunchy texture of the coarse grated radish, and the aroma of soba become a trinity, and you just can't stop your chopsticks. Ordering the large portion was the right choice. The interior is also a calm folk-art style atmosphere, and you can enjoy your meal leisurely. Next time maybe cold tanuki soba? If you are curious, go check it out.

View on GoogleLike "folk craft soba", the interior has tatami seating with an old folk house style. The atmosphere is good, but the staff's movement is bad. Upon arrival, when I peeked into the store from the parking lot, there were 2-3 empty tables, so when I entered, there was 1 group waiting at the entrance. ? Thinking "?", I wrote my name on the waiting list and waited for 10-15 minutes, but no guidance was given. Clearing dishes from empty tables is slow. There were 3 indoor staff members, but they looked clumsy. Even after sitting down for about 30 minutes, they didn't come to take orders, and tea wasn't served either. I had no choice but to call out to them and place an order. The soba itself is ordinary, but the customer service is terrible. It's such a waste to have such a good atmosphere. Disappointing.
