Influenced by the owner's "thoughts", it's a shop that I personally like very much. Although it is a relatively simple soup where you can enjoy the umami of the ingredients, all ingredients are domestic, chicken tsukne is handmade, efforts are made not to rely on oil such as using miso to produce a "rich feeling", homemade noodles, and the menu is very rich starting from simple ramen to tantanmen, curry ramen, tsukemen, and seasonal carbonara ramen. Owner used to be the owner of multiple shops like seafood izakaya, and it seems the current ramen shop started because regular customers told him to, and it seems he is realizing this rich menu by making use of past experience. Also, I feel that the strong desire to give customers good things for their bodies is pushing the commitment to domestic ingredients and his elderly body which would be natural to retire already. I will visit periodically until the owner retires!
View on GoogleBecause the overall rating was a high 3.8, I visited with an acquaintance. It was said to open at 11, the owner greeted us friendly, we entered and ordered seafood chanpon and salt ramen set. Perhaps because we were the first customers, we were made to wait for about 20 minutes and ramen appeared. About 5 minutes later, fried rice also appeared. First, a bite of the ramen... whether it smells like oil or candle smell, some unknown smell and taste components caused my appetite to drop drastically. Next, a bite of the fried rice, hmm hmmm! This is also, whether it's reheated frozen fried rice, the texture of dry hard rice, and the hard rice quality of insufficient reheating collaborated in the mouth. The taste is also mediocre. I don't know if the entry time was bad or the menu ordered was mediocre, but my accompanying acquaintance had the exact same opinion for both ramen and fried rice, so I'm sure we felt the same taste. In a word, the ramen has a strange smell and an oil-like, candle-like taste that lingers in the mouth all day long. Hard fried rice. Personally, a shop with no second time & rating 3.8 is ????
View on GoogleNot much information comes out, but it's a shop I happened to find, but HIT! Located in the basement of a shopping mall in Ibaraki, Osaka, run by an old man alone. Osaka-like, "Ramen with Oil Kasu and Roast Pork" for 850 yen. The noodles are homemade, chewy freshly made whole wheat noodles. The broth adds Kyoto local chicken and seafood to add depth to the deliciousness. The old man is probably researching various things! After ordering, he fried the kasu! There are accents of fried onion and yuzu, thinking about taste change and expansion, and it was delicious.
View on GoogleWhen I went to Ibaraki for work for the first time, I met wonderful ramen. I had the shijimi ramen in the picture, and it was very delicious. A gentle, nourishing soup using body-friendly ingredients, and unique raw noodles that you can tell the moment you put them in your mouth. I was explained that the soup is made from so many ingredients (please see the photo). Also, raw noodles are only allowed to eat those hand-made the day before. The master is extremely research-minded, and I am moved by his passion. It must be hard to manage alone, but I wanted this shop to continue forever. Returning from business trip, I talked to my wife, and we are excited to go eat with the family next time.
View on GoogleNatural salt tsukemen🍜, medium-thick straight whole wheat noodles with firmness, chewy and good throat-feel, chashu, boiled egg (1/2), menma, naruto, komatsuna, chopped nori are arranged, light dipping sauce with green onion chicken bone (Kyoto local chicken) base plus seafood (niboshi) salt taste, slightly oily with moderate saltiness where the flavor of the ingredients can be firmly felt, delicious enough to have without soup-wari 😄 There are many noodle menus using chicken bones and seafood, there are also set meals and single dishes, table seasoning has only pepper.
