View on GoogleThe area around Kintetsu Fuse Station in Higashiosaka has many restaurants and is one of my lunch expedition destinations. Popular Higashiosaka ramen shops are scattered along the Kintetsu line. Today I headed to one of them, "Fuse Hosomi-shoten", after confirming the availability of summer-limited cold noodles. When you enter the shop, you first buy a meal ticket at the ticket machine on the left. There is a wide variety of ramen and side dishes, making it hard to choose, but since I had decided on cold noodles today, I pressed the button without hesitation. ・Yaki-Ago Cold Ramen Most of the bowl surface is covered with 2 large pork belly chashu slices, 2 halves of seasoned egg, coarsely chopped onions, mizuna, tender bamboo shoots, naruto, and chopped green onions. The noodles are medium-straight noodles from Kyoto's "Menya Teigaku" with an angular impression, and the black specks are mixed with roasted bran for a rich aroma. Being chilled firmly, they are thin yet have a chewy bite. The yaki-ago cold soup has no harshness or fishiness, the savory flavor and aroma stand out, creating a deep taste backed by dashi; it is so delicious that you will keep slurping it down without leaving anything even after finishing the noodles and toppings. The sweet, coarsely chopped onions match the soup, and the slight bitterness of the mizuna acts as an accent. The long bamboo shoots offer a unique pliable and crunchy texture, and you can enjoy combining the soup with the soft-boiled yolk of the seasoned egg that has appropriately absorbed flavor. Overall, it was a cold ramen with a Japanese feel.
View on GoogleVisited "Hosomi-shoten", a top 100 restaurant that I've been curious about for a while. I had the limited "Yaki-Ago Shoyu with Ajitama". The clear soup looks refreshing, and the savory flavor and umami of yaki-ago are firmly felt. Even while chilled, the presence of the dashi is there, and the aftertaste is clean and easy to eat. The noodles have a smooth throat feel and go well with the cold soup. It's the perfect ramen for the hot season. The seasoned egg was especially impressive. The soft-boiled degree is exquisite, the flavor is well soaked in, and it was very delicious. The chashu was also tender, enhancing the overall satisfaction. Satisfied to finally visit the shop I was curious about. If I have the opportunity, I'd like to try other menu items as well. 🍜✨
