Masterful. 4 stars instead of 5 not because of technique, but because the toppings could be more generous. The charsiu men gets you 4 thinly sliced Charsiu and about 5 menma pieces The technique is just so pure The soup is super deep, on the sweet side, but the umami of pork comes through so strongly. This is unlike many thin soups that try to cover using too much salt The noodles is slightly floury on the outside, but otherwise it's fine The char siu bite is also technically very sound. It's got this very particular bite, not something you can just recreate at home And finally the menma has such a good bite, seems like it's compressed, quite sweet and with a complex spiciness that works particularly well with the broth
View on GoogleHighly recommend - we’re on holiday and found this lovely spot! The best ramen we’ve had in Japan.
