The Yoichi Distillery's drying building, commonly known as the kiln tower, is a facility that plays an important role in whisky making. This tower is used to dry malt, and peat is burned and its smoke passed through to give the whisky a distinctive smokiness. The Yoichi Distillery carries on traditional Scottish methods, and the kiln tower was designed as part of that. The tower's structure is designed to circulate smoke efficiently, which allows Yoichi whisky to have a deep flavor and aroma. For visitors too, this place where history and technology come together is an appealing spot to feel the depth of whisky.
View on GoogleApparently this was where two-row barley was smoked and dried with peat, but it's no longer in use Apparently peat is still burned here, though not all the time, and when I visited it happened to be burning, so I got to smell its distinctive odor
View on GoogleFirst stop on the Yoichi Distillery factory tour; you can actually pick up the peat and smell it. Be careful not to bump your head when entering the drying tower.
