① Restaurant Overview A popular soba restaurant in Hokkaido. It’s about a 15-minute walk from the nearest station. Write your name on the sign-in sheet at the entrance, pick up a PokePer, and wait. They offer a variety of seasonal soba dishes. Prices are on the higher side. ② Food Review ◎ Hebesu Seiro Enjoy soba with “hebesu” (a citrus fruit from Miyazaki Prefecture) added to the dipping sauce. To ensure you savor the noodles while they’re piping hot, the soba is served in two separate portions. The Sarashina soba has a translucent texture yet a firm bite—it’s delicious. Between warm dipping sauce and cold soba broth, the cold broth does a better job of bringing out the flavor of the soba. The tempura, typical of Hokkaido, features potatoes, eggplant, shimeji mushrooms, and shishito peppers—it’s crispy and delicious.

The firm Sarashina soba is delicious! I'd wanted to go to this shop for a long time, but it's a popular place that sells out and closes quickly, and I finally made it. To briefly introduce the menu, the soba dishes come in 3 categories: warm soba, cold soba, and cold soba with warm dipping sauce, and they also have rice bowls and tuna sashimi. Also, besides the menu, limited items are written on the walls, so after entering, don't rush and look around. This time I ordered two items, duck seiro and chicken and burdock seiro, and the Sarashina soba was delicious. Also, the seiro is brought in two separate servings to keep the soba from getting soggy. Like the soba-yu, several staff members keep an eye on their surroundings and bring things at perfectly timed moments. This stylish consideration also earns high marks. As for toppings other than soba, the duck meat in the duck seiro is very delicious. It has a deep seasoning with concentrated umami. Also, the burdock in the chicken and burdock seiro was good eaten crispy as is, put in the dipping sauce, or sprinkled with salt. I'm torn about what to eat next time.
