【5-minute walk from Susukino Station】A restaurant where you can enjoy Jingisukan and hormone (offal) dishes with an emphasis on freshness. Their signature hormone is "ultra-thin hormone," carefully prepared one piece at a time in the shop. It isn't greasy and is very easy to eat, a superb dish that even people who dislike hormone can enjoy! You can choose the seasoning from 3 types: salt, miso, and extra spicy, so please try various flavors! The tender shoulder loin Jingisukan, which can be eaten rare, is also recommended♪ It's a superb dish we especially want Jingisukan lovers to try. Courses with all-you-can-drink are also available, perfect for banquets. Inside the shop there are counter seats where even solo diners can relax, and small raised tatami areas ideal for various banquets and gatherings…

I figured that when you come to Sapporo you can't skip Jingisukan, so I visited "Shoya," which also had good reviews. It had an atmosphere of being loved by locals rather than being a shop for tourists, and my expectations rose the moment I entered. First, the service of all the staff left an impression. They were friendly and cheerful, creating an atmosphere that's easy to enter even for a first-timer, and it was very comfortable. They also carefully explained recommended ways to eat and how to grill, so I was able to enjoy it deliciously. As for the Jingisukan itself, I understood why it's popular after one bite. There was almost none of the gaminess or odor typical of lamb; it was very tender and juicy. With each bite the umami of the meat filled my mouth, a dish that made me realize anew, "lamb can be this delicious." The meat was very fresh, and the fat wasn't heavy but had an elegant sweetness. I think even people who normally dislike lamb a bit could enjoy it. In fact, it was easier to eat than I'd imagined, to the point I wanted to order more. The vegetables grilled together had absorbed plenty of the meat's umami and were also delicious. The sweetness of the vegetables and the umami of the lamb combined, going well with both rice and alcohol. The sauce was also superb. Not too strong, with a seasoning that brings out the meat's natural flavor, so I didn't get tired of it until the end. Adding condiments partway gave a different taste, and being able to adjust it to my liking was also a plus. The grilling time was fun too, with the savory aroma filling the shop and stimulating the appetite further. Including the smoke and sound, I could savor the special time of "eating Jingisukan in Hokkaido." Looking at the price alone, some people may find it a little expensive, but having actually eaten there, considering the quality of the meat, the volume, and the service, it's fully worth it. Not only as a meal during a trip, but it's the kind of place I'd want to visit again and again if it were local. There are many Jingisukan restaurants in Susukino, but this one has a very good balance of meat quality, service, and atmosphere, and it's one I'd recommend with "if you can't decide where to go, start here." It became a good memory of my trip to Sapporo. The next time I come to Hokkaido, I'll definitely stop by again to enjoy the delicious lamb. Thank you for the meal!

Since my first visit about 5 years ago, I've become a regular, and it's one of my favorites. "Horumon to Jingisukan no Shoya" in the Susukino underground is a hidden gem known only to those in the know. It's in the B1F of the Susukino Kaikan, and the moment you go down the stairs, savory smoke that stimulates the appetite and lively laughter greet you. The master fits the word "ikeoji" (cool middle-aged guy) perfectly, with a gentle manner and perfect attentiveness. His atmosphere of welcoming regulars and first-timers alike makes you find yourself wanting to come back again and again. The part-time staff are also really pleasant, communicative, and cheerful. Even during busy times they move briskly with smiles, and a warm, comfortable atmosphere flows through the whole shop. The signature "Jingisukan" is tender and has no gamey smell at all, going superbly with lemon. Once you eat it, you're hooked. The "Hormone" can be chosen from 3 types: salt, miso, and mildly spicy, and all have a perfect balance of fat sweetness and umami that will surely make the drinks go down. The "Mutton tender (limited quantity)" and "Lamb kalbi" are also popular, so delicious that they change your idea of mutton. Besides that, they have everything from standards to rare cuts such as "yagen," "mino," and "beef tongue," all carefully prepared to bring out the best in the ingredients. They also have a good selection of grilled seafood such as "live octopus," "overnight-dried squid," and "small hokke," and the aroma spreading over the grill alone makes the drinks go down. Meat quality, grilling, service, atmosphere──everything is just right, a place to relax and enjoy a Sapporo night. If you want to spend an unpretentious, delicious, and warm time, "Shoya" is definitely recommended. It would be a shame to talk about Susukino without knowing this place.

A hit of a restaurant, the first in a long time The staff's service and the taste were wonderful!! Especially the tenderloin, salt hormone, and mildly spicy hormone were incredibly delicious 😋 Personally, mixing the spicy miso that comes with the tenderloin into the mildly spicy hormone to make it even spicier was the most delicious!! It's small and I could eat calmly 🍽️ A hidden gem! It was so delicious I forgot to take photos・・・ I ate too much so the price isn't a useful reference lol The fact that you earn double JAL miles is also a big plus!!

Small-cut pieces of meat I could eat forever. Delicious. The tender is 1300 yen, soft and juicy. Salt hormone and miso hormone are 600 yen each. You could keep eating them forever. Personally I find them thin and easy to eat. The Jingisukan has no fat. The flavor is well marinated. Again, tender and easy to eat. The umami seems to overflow. I've eaten Jingisukan since I was a kid, but personally it felt like a new genre opened up. As expected, if you choose the cuts well and prepare them properly, it's truly delicious.

There's no gamey smell at all, and whether you eat lamb or hormone, it's always the right choice! Perhaps because it was a weekday, I was able to get in alone without a reservation, and I enjoyed drinks while chatting happily with the owner! I'll definitely come again!!!!
