A ramen specialty shop with a strong niboshi flavor. With the longest history of any ramen shop in Sapporo featuring 'niboshi' as its signature, it has captivated many fans with two signature menus: niboshi chuka and tsukemen. From choosing ingredients to every drop of soup, we continue our uncompromising pursuit to draw out a one-of-a-kind niboshi umami. Under the banner 'Bringing tsukemen culture to Sapporo,' we are rooting a new food culture in Sapporo, the city of ramen. We serve an aromatic, deep bowl that draws out the umami of carefully selected niboshi to the fullest. With our own method that turns even niboshi's characteristic bitterness and harshness into umami, we achieve a rich soup you can't taste anywhere else. Starting with our signature 'Nibochu'…

If you’re used to tonkotsu based soup, then this might be slightly different from what you’re used to. It was my first time trying out niboshi (dried sardines) based ramen and the experience was just alright. Taste isn’t bad. The fish stock might initially taste a bit bitter at the beginning, but nevertheless it was fragrant and tasty enough. Nothing over the top about the ramen. I’d come back for the convenience but I doubt I’ll ever crave for it.

A superb tsukemen where the rich umami of niboshi hits you hard. The thick soup has none of the bitterness or off-flavors of seafood, and pure richness and aroma fill your mouth. The extra-thick, chewy noodles fragrant with wheat hold their own against the rich soup, a perfect match, and you can't stop eating. The chashu topping is juicy too, and you can enjoy it to the last drop without getting tired of it. A hugely satisfying bowl I'd want not only niboshi fanatics but all ramen lovers to try at least once

First visit to Niboshi Kita 24-jo. I ordered niboshi ramen and a mini chashu bowl. The ramen had the aroma of niboshi rising up, with solid umami spreading from the first bite. The soup had no harshness and was easy to drink, the fat wasn't too heavy, and I enjoyed it to the end. The bowl was packed with diced meat, very satisfying. The onions were sweet, and the seasoning was somewhat gyudon-like, the kind that makes you eat more rice. The red pickled ginger was a nice accent. It went great with the ramen; getting the set was the right call. A shop I recommend not only to niboshi lovers but to anyone who wants to enjoy deep umami.

2026.9.6 Went right after opening and ordered the nibochu There were 4 people inside before me, but it took quite a while for it to arrive But the ramen itself was really delicious and satisfied my niboshi craving! I thought Sapporo didn't have thick niboshi shoyu ramen, so I'm happy! Even when there is, it's tonkotsu-based so you can't taste just the niboshi… The chashu was melt-in-your-mouth tender, so good! I wanted 3 more slices It filled up while I was eating, so going right after opening is the way to go

[Niboshi tsukemen that's superb, with a large portion] The niboshi-forward tsukemen is superb! This time I ordered the 200g "Special Seasoned Egg Atsumori (1250 yen)". Free large size is also a nice perk. The soup wasn't too strong and clung really well to the thick noodles. You can get broth to dilute it, so I enjoyed it to the very end🌱 There's parking for about 4 cars right in front. Besides cash, PayPay was also accepted. I'd like to go eat there again!
