One of the best ramen spots in town — the queue says it all. I came during the late lunch hour and the wait was quite reasonable, about 20–30 minutes. The menu is available in English, so ordering was easy. We tried the Echigo (spicy miso flavor) and the Mito (rich soy flavor). Both were served in large bowls with broth that was rich, full of umami, and packed with flavor. The noodles were cooked perfectly with great texture. Between the two, my personal favorite was the Mito. I also recommend grinding some sesame seeds into the broth to enhance the flavor even more. We also ordered their famous chahan (fried rice). It had excellent wok hei and was absolutely delicious. Definitely worth trying!

I visited the ramen shop Shingen, which is known to be popular in Hokkaido. I went in with high expectations, but ended up waiting around 30 minutes in line. To be honest, I questioned whether it was worth waiting that long. I ordered the Echigo (spicy miso) ramen with an egg topping, the Shinshu (rich miso) ramen with an egg topping, and fried rice. The Echigo ramen was certainly spicy, but beyond the heat, I didn’t find much depth or umami in the flavor. The Shinshu ramen, despite being labeled as “rich miso,” lacked any noticeable richness and felt very ordinary. The egg topping was not soft-boiled, which made it unnecessary for me. The fried rice was also average and not particularly memorable. While the shop is clearly popular, the taste itself did not leave a strong impression, and I personally don’t think it is worth lining up for.

Great ramen, but I wouldn't say it's the best! Was it worth the wait (which was 1 hr for us), maybe not. However, it was delicious regardless. The ramen came in these massive bowls which were bigger than my face. The pork chunks, however, were super tender and flavorful. The broth also wasn't too salty. The service was amazing though! A young male waiter made sure to double check our order since we didn't speak Japanese, but he got everything correct and was super patient with us, despite the long line. Overall, the experience was great, but I'm sure there would be better ramen places elsewhere.

I ordered spicy miso ramen, regular miso ramen, fried rice, corn and butter for toppings. Regular tastes like subtle deep miso flavor. Spicy tastes like Korean 참깨라면 flavor but more smooth and deep flavor. I enjoyed both flavors and can't pick one but I can say that if you want to eat with fried rice, go for regular flavor. They taste so good together. Fried rice is fire! Must eat lol Overall, they taste good. You may think it is a little bit salty but it didn't bother me at all to finish every last bite. I waited around an hour from 2pm to 3pm but when I finished eating, there was no line around 4pm.

12/10! We came when there’s not much queue at 2.15pm. Quick order and service, with English menu. The portion is enormous, half size = normal regular sized ramen else where. But the most impressive is their soup bursting with wok-hei, and noodles were just nice! Personally the fried rice was another highlight. I will queue for the fried rice only too. Very satisfying meal! Come at off peak timings to avoid long queue (there’s queue even at 9-10pm)
