Checking off another top ramen shop on my Sapporo hitlist, I checked out Nouilles Japonaise Tokuichi for lunch today and ordered the standard wood fired shoyu ramen. It comes with 2 slices of duck chashu, 2 pieces of menma, green onions and a small piece of nori. The broth has an intense wood fired aroma and taste but behind that is an elegant soup made with care and attention. The main components of the broth are chicken bones, pig's feet, and vegetables and it remains uniquely addictive until the last drop. The noodles are also uniquely made with wheat bran that delivers a slightly nutty flavor and pairs well with the broth. While tasty, one of my slices of duck chashu was very tough and fibrous and after chewing it for a minute or two, I gave up on trying to break the fibers down with my teeth and had to eject it from my mouth due to the chewing gum texture it had become. This is a risk you take when utilizing lean duck or beef cuts in your meals, and it is why the execution of cooking these cuts is so important. Unfortunately, it fell short of its aim within my bowl so I can't give it the perfect score that their intention likely deserves. Regardless, its a specially unique bowl that I'd highly recommend trying if you make a trip North.
View on GoogleWe visited on a Saturday for lunch. We had to wait about 30 min but it was closing soon. We did not regret it ! This place is really a hidden jewel. Its location is a bit out of the way but easily reached from Sapporo center by metro. This remains a mystery for us as why the restaurant only has 4.4 stars; we were blown away by these ramens. Now, I can’t imagine a visit to Sapporo without eating here. Highly recommended 🍜
View on GoogleOh man, this is the best Shoyu ramen i've had. The soup has a really complicated taste that is so so good. The noodles are very well done and the duck is awesome. The soup was the best part, it has a smoked smell with a distinct oil blended in the soup. I would rank it among the best ramen i've had. It's in the market so need to find parking nearby. The service is good and they explain the flavors of each dish when served.
View on GoogleSaw a line outside and decided to try this ramen. Was a bit taken aback with how they designed the restaurant. It doesn't feel like a ramen place but a comfy, french dining instead. You still have to take a coupon for ordering the ramen which make the concept wholly interesting. I tried their main menu which is salt ramen. Honestly you won't believe how complex the broth is. The foam I think is salt and kombu. The soup is a consomme I think, they are bursting with umami but still very easy to drink by itself. Adding a little bit of the foam opened up the flavor more. The noodles are the thin type, they're really easy to slurp and went along the broth really well. Honestly a nice surprise and a whole different experience. A must visit for sure
View on GoogleReally yummy noodles. The chicken one had a lovely kombu and salt foam that added complexity to the soup broth. It's located in a building where the fish market seemed to be. It was a very different atmosphere in the store compared to the surrounding area. More refine and sophisticated. I was expecting a line but there was no wait when we got there.
