We simmer plentiful selected cuts of pork, such as genkotsu bones and skull bones, along with chicken bones, to pack in umami. With a seafood flavor centered on bonito and mackerel, we finish it into a mellow soup. Please enjoy our rich seafood tonkotsu shoyu ramen and tsukemen, with custom-made medium-thick noodles that cling to it.

Our family was on holiday in Japan and we stumbled upon this ramen bar by accident - but they went ahead served me one of my Top 5 ramens of my life. This restaurant is brilliant. Asides from the delicious food, it has an amazing atmosphere, and very attentive and friendly service. It is a small restaurant - so you might have to wait a short time for a seat to free up - but it’s well worth the wait.

Authentic rich seafood tonkotsu is rare in Sapporo! A highly satisfying dish worth visiting at off-peak times" I suddenly craved the classic "rich seafood tonkotsu tsukemen," which is surprisingly hard to find in Sapporo, so I researched and visited for the first time. This time I went around 2 pm on a weekend so I got in without waiting, but it seems to be popular enough that there's normally quite a wait. The interior is compact with only 7 counter seats, so it's hard to handle many people at once, and visiting with family at lunchtime might be a bit of a hurdle. To avoid crowds, I strongly recommend visiting at an off-peak time as I did. When I chose "large portion" when ordering, I was astonished at how generously the bowl was filled. It was more volume than I imagined, but the chewy, springy thick noodles were well coated with the umami-packed soup, and I couldn't stop my chopsticks and finished it deliciously down to the last bite! The balance of seafood and tonkotsu was exquisite and mellow, but personally I think an ultra-rich, punchier version could be interesting too. They seem to have several soup types such as salt for summer, so I'm curious about the other menu items too. My child, who had said before the visit "I'm not very hungry," polished off a regular portion. They said contentedly, "It was so delicious I could eat it all!" It's a dish I can definitely recommend for its high level of polish. I'd like to visit again, planning my timing carefully!

A ramen shop right near Sōen Station. There are about 8 seats, counter only. It seems to be run by a married couple, and they run it efficiently. I ordered the special tsukemen. The special adds nori, seasoned egg, and chashu. You can choose regular or medium portion of noodles, and a large portion is available for +150 yen. The soup is a mix of seafood and meat, rich and creamy. It goes really well with the thick, chewy noodles and is delicious. I think it's rare to find tsukemen this delicious. They were serving an extra-rich niboshi tsukemen for their 1st anniversary, so I revisited and there was a huge line. I waited over an hour. But once I ate it, the hardship blew away, and the extra-rich niboshi soup was irresistibly delicious. The rich yet deeply flavorful soup goes wonderfully with the chewy flat noodles that aren't that high in hydration, and it was superbly delicious. It was a very tasty ramen. The condiment, black yuzu hachimi, was so fragrant and delicious that I wish they'd sell it separately. Meal tickets, cash only.

Not bad, but not to my taste. As for the disappointing points: the mild Nishiyama Seimen noodles didn't seem to harmonize with the soup, which is a waste. Only the noodles were slippery, and it felt like drinking the soup separately. It wasn't a dish you could enjoy together. The handing over of change is fine, but for a visitor at the corner, it bothers me from a hygiene standpoint. (Money is passed back and forth overhead many times) It would be better if his wife washed her hands each time, but that wasn't always the case. And the distinctive taiko drum sound bothered me the most (sorry to those who like it). It may be to keep the owner's tension up? What was good: the chashu had a carefully made flavor. It was tender and nicely shaped. Overall, it wasn't bad, but the depth of the dashi and bones wasn't as much as advertised. The aftertaste isn't bad, so I'd like to try the standard miso too. Next time, with expectations. (The curry noodles offered only in December, spicy. The spices aren't strong)

A shop for rich seafood tsukemen and ramen Arrived at the shop at 12:00 8 people lined up The interior has only 8 counter seats, but turnover is fast so you can sit surprisingly quickly! This time I ordered ramen with 4 slices of chashu as a topping 👍 The seafood soup is rich, full-bodied, mellow, and delicious! No off-flavors and no aftertaste lingering in the mouth Rather, only a lingering umami remains When you add the shu hachimi spice on the counter, it adds not just heat but even more richness, so good They sell it too, so I might buy it next time The shop's atmosphere is nice too Both the man and the woman are pleasant, and the gentle atmosphere is very comfortable ♪ Next I want to eat the tsukemen 🍜
