[11-minute walk from Motomachi Station, Sapporo Municipal Subway Toho Line] This is 『Yakuzen Curry Honpo Ajanta Sohonke』, the birthplace of soup curry, founded in 1971. With careful handcraft, we serve "a bowl that supports our customers' health." The soup, prepared over 6 hours from early every morning, uses no chemical seasonings at all; carefully selected chicken and vegetable stock is blended with 30 kinds of spices and 15 kinds of Chinese herbal medicine. We also never keep leftovers by freezing, so you enjoy only dishes made that day. The interior is filled with the warmth of wood, and its calm atmosphere makes it easy to drop in even alone. It's of course great for dinner with friends or family, and also for a date savoring blissful curry with someone special…

I visited "Yakuzen Curry Honpo Ajanta Sohonke," a historic restaurant that is absolutely unmissable when talking about Sapporo soup curry. Loved by Hokkaido locals for 55 years since its founding in 1971, this place is the sacred ground that created "Yakuzen Curry," which could be called the prototype of today's soup curry. This time I ordered the overwhelmingly popular No. 1, "Ganso Tori Curry (1,750 yen)," with a cheese topping (200 yen). The secret soup, simmered slowly for a whole day with 30 kinds of spices and over 10 kinds of ingredients, gives a sensation as if the complex aroma of spices and deep richness soak through your body with one sip. The big bone-in chicken is so tender it can be easily pulled apart with a spoon, and it goes superbly with the medicinal soup. With the mellowness of the cheese added, I could enjoy it changing into an even deeper flavor. In addition, the "Tori Yasai Curry (2,250 yen)" has plenty of vegetable sweetness and umami dissolved in it, and the "Ramu Curry (2,250 yen)" is a superb match of non-gamey lamb and spicy soup. The varied menu, such as the "Kashmir Curry (1,850 yen)" and "Date-produced Kujo Negi and Pork Shabu Curry (1,650 yen)", all show off a commitment to ingredients, and it seems there would be new discoveries no matter how many times you go. It's not just spicy; after eating, your body warms up and you feel energized from within, a real "Yakuzen Curry." It's a top-notch place I sincerely recommend, where you can taste the rich roots of Hokkaido's proud food culture with all five senses.

Ganso Tori Curry with white rice (1,750 yen) I went to Yakuzen Curry Honpo Ajanta Sohonke, known as the originator of Sapporo soup curry. This time I ordered the popular No. 1 "Ganso Tori Curry" with white rice. According to official information, Ajanta is not just a soup curry but a yakuzen curry shop using 30 kinds of spices and 15 kinds of Chinese herbal medicine. The spices are ground from whole, and the herbal medicines are also imported whole directly from China. Furthermore, they prepare the soup over about 6 hours from 5 a.m. every morning. With an attitude of using no frozen storage or chemical seasonings, it seems this effort is also why they can only make 50 servings a day. The exterior stands out a lot, with a big yellow sign floating against the blue night sky. The interior is cleaner than I expected, based on wood grain, and every ornament feels authentic, from the Ganesha statue and elephant decorations to the tiles and chandelier-like lighting. It gives the impression of not just an interior made for tourists but one that properly builds a world. In the soup, the spices have really transferred into the oil floating on the surface, and this oil is quite spicy. It has a presence like lard, and eating it continuously makes you cough a bit. The spiciness felt slightly hotter than Java Curry. But it isn't the type that pushes only with oil; the soup itself inside has richness and a faint sweetness, and it's well balanced. It goes best eaten with the ingredients and rice rather than drinking the soup alone. The kick of spices, medicinal aroma, and the umami of chicken and vegetables overlap, giving a solid satisfaction of eating authentic spice curry. The chicken is moist and tender. It has little fat, but the strong spices make it a good match. The carrots are well simmered and strongly sweet, serving as a palate cleanser between spices. The eggplant and green pepper are lightly deep-fried without coating and have presence, wrapped in oil and spice. The menu also says Ganso Tori Curry consists of 2 chicken legs, carrot, and green pepper, which is quite simple. Compared with today's ingredient-packed soup curries it isn't flashy, but conversely it feels like it competes on the soup itself and the chicken. True to the name yakuzen curry, it's not just a spicy curry; the sense of spice entering the body is very strong. It's designed so you eat the soup through the rice, chicken, and vegetables, rather than gulping the soup alone. Honestly, the stimulation of the spice and oil is such that lemon water would probably go very well. Even so, the sense of authenticity is strong and satisfaction after the meal is very high. Rather than an evolved form of Sapporo soup curry, this is a shop to come to for yakuzen soup curry close to its origin. It's different from neat, modern soup curry, and was a dish with the persuasiveness befitting the original.
