Delicious ramen will definitely come again when I visit Sapporo. Randomly found this store and decided to stop by the ramen store in the cold weather for a hot bowl of noodles. Order a Salted Ramen and Miso Ramen.

Great and CHEAP. 🍜 Only stopped in because it was close to where I was anyways, but it was really, quite good and amazing value. Everyone will have their own takes on what constitutes a good bowl. I have a cold and wanted good broth and this was that, so I’m happy. 🍜 People rave about places like Saimi in Sapporo and I’m a fan of their approach. One of my go to spots near home is Iori in Chitose. The chef there apprenticed at Saimi. Now, I have no idea if this places has any connection, but the vibe is definitely there. 🍜 Basically we were picking up a snowboard from its end of year tune and this place was nearby. I like the name “makoto-men” (real noodles) Hotaka. I figure that’s a big claim and they delivered. 🍜 Really simple. Good meaty broth, noodles, chashu pork, a little fresh ginger and some green onion. Just what my cold needed. It just a small place and won’t be winning awards, but for a solid bowl right near the shop I was going to, it was great. 🍜 I should also mention it was really cheap. The base bowl was only ¥730. I ordered two extra slices of pork for ¥150 and an ōmori (large serving) for an extra ¥100, but even with that it was still only ¥980 including tax. You know the price isn’t going up any time soon either, because the menu is carved into a chunk of wood. Haha.

Had the miso ramen with extra cha shu (broth not too thick/viscous & pork so delicious, tender) while wife had the shoyu ramen tamago (creamy eggs, moyashi, equally delicious broth). Lots of chewy noodles, different kind for each style of ramen. Excellent miso ramen in a city with many great ramen-ya: off the beaten path, close to Oyachi Bus Terminal and a couple of pachinko parlors. Yen only: purchase a ticket, sit at 1 of 2 tables (or grab a stool), and expect terrific ramen

Visited August 2025 【Possibly my first ever "Jun-Sumi style"】 I visited on a weekday. The shop opens at 11. I arrived around 10:50. There's a parking lot in front of the shop, and one car was already there. When customers started standing in front of the shop, I got out of my car too. By opening time, 4 groups including me had gathered. At 11:04, customers started waiting. A waiting family finally got in at 11:25. Rather than showing up halfway early, I recommend arriving right on time to get the first round. Once inside, buy a meal ticket. Customers who are waiting should also buy their tickets first and hand them to the staff. The interior is compact, simple, and neat. Seating is counter seats and table seats. Water is self-service, with a pitcher at each seat. There is a TV. At 11:14, the bowl arrived. ● Miso Chashu 1200 yen The noodles are medium-thick curly noodles, said to be a characteristic of the Jun-Sumi style. The texture is crisp and snappy, but the chewiness is weak. The aroma is the kind often found in yellow noodles from commercial suppliers. Soup From the smell inside the shop I thought, "they use garlic," but the garlic didn't push itself forward, with no conspicuous pungency. The miso isn't overly prominent either, and it matches well with the tonkotsu base. The soup has a gentle richness and depth. The vibe reminded me of tantanmen. About halfway through, I mixed grated ginger into the soup. I didn't notice a big change; it serves as a small accent. Chashu Three large, thickly sliced pieces of chashu. The fatty part is very tender, and the lean part has a good bite. No gamey smell. The flavor of the meat itself comes through, with gentle seasoning. In addition, there's also a little coarsely chopped chashu? and something like soboro. Since I came to a Jun-Sumi style shop, I of course had the miso this time, but I'm also curious about the shoyu, shio, and chicken shoyu, which aren't Jun-Sumi style ★
