Ordered the oyako soba and kashiwa seiro Oyako soba The egg isn't fluffy but the firmly set type The chicken fat from seared mature hen adds richness The sauce is sweet-salty, strong in flavor and fragrant There's a lot of noodles too, and with the strong sauce it's very filling; the sweetness hits hard, then the soy sauce, then the bonito dashi gently comes through. The flavor was too strong for me, so I left it to my companion to finish. Kashiwa seiro You can enjoy both the kashiwa dipping sauce and the zaru sauce. The kashiwa dipping sauce here also uses seared mature hen The zaru sauce is also dark and cold, so the soy sauce and bonito dashi come through before the sweetness. The restroom is spacious, and I thought the thoughtfulness of providing wet towels and toothpicks as an amenity set was wonderful. 【Caution⚠️】 The shop name says nishin soba, but there's no nishin soba on the menu They had it in the past, but as of December 2024 they don't. If you want nishin soba, it's best to inquire. Water and tea are self-serve. It was clearly written that it's due to a staff shortage lol The water and tea pots were empty, but they looked so busy that I felt bad and never ended up calling out. They close before closing time. When I went in after 1 PM on a weekday, there was 1 customer waiting who had already ordered. The only 4-person table was left uncleared since they had no time to tidy up, and they'd already taken down the noren. So aim for opening time

Went for the first time with a friend, right at opening time. The seared kashiwa soba and duck seiro soba were very satisfying in both portion and dashi, and we said we'd like to try other menu items too, so we want to go again ^^ It seems the master runs it alone, so it's good to allow plenty of time.

It takes a while for the food to come out, but every dish is delicious and you can see the careful work. I envy the locals for having such a delicious shop. I want to go again right away…… Revisit, added photos. Revisit, added photos. The menu had changed quite a bit, but it was as delicious as ever.

Refined! That's the first word that comes to mind for this shop. From the shop's atmosphere and appearance to the taste of the soba, everything is just refined. If you come to Kushiro, the recommended soba is the kashiwa soba. You can enjoy both a warm dipping broth and cold soba tsuyu. The soba has a wonderful aroma, and its bite, chewiness, and smoothness going down are all superb. The chicken has its skin lightly seared, and the aroma is just great. The tsuyu isn't too sweet or too salty, nicely balanced! The soba-yu is also wonderful, rich and thick. If you come to Kushiro, I recommend this place for soba!

It seems to be run by one person and there aren't many seats I had the seared kashiwa With hot soba, it can't be helped that it gets soggy as you eat sometimes it's even disappointing from the first bite… but this has become one of my favorite soba shops It has a nice bite and the broth is delicious! For the first time I drank it all! The moment I ate the seared kashiwa I felt like I was at an izakaya lol I'll go again
