A ジンギスカン restaurant that only opens at night and is a ramen shop during the day... It has neither a name nor a sign, so I couldn't identify it and went right past. It's an unusual place, but the 塩ジンギスカン is delicious, especially the outstanding ネギ塩. It's also great that you can have ramen there to finish the meal!! And that ramen is delicious too!! It's far from central Hakodate, but worth taking a taxi out there.

Ramen made with shrimp is unusual; the last time I had it was at a 山岡家 event. I ordered 海老味噌ラーメンAセット for 1500円. There weren't many customers. It arrived in one of those trendy pot-like bowls. I liked the gentle shrimp aroma drifting through my nose. The soup was supervised by 三枝氏 of ミシュラン, but it didn't resonate with the palate of ぶーひで氏, who likes strong flavors. It would be nice to choose the flavor intensity. Perhaps a bold, assertive flavor isn't possible under ミシュラン supervision. I ate the 3 gyoza and a bowl of rice, and that was it. The interior is spacious and stylish. They're doing their best with the outside view despite unfavorable conditions. The parking lot is asphalt, but stones are scattered around. The owner is pleasant, so I thought this place could head in a good direction by doing things his own way rather than the ミシュラン way.

My first time having 塩ジンギスカン. It differs from my previous impression and really is like yakiniku. The salt has soaked in, and the meat is tender. For the vegetables, they bring out 3 kinds of salt: kombu salt, クルミン salt (I think that's what it was), and rock salt, so you can choose whichever you like. They said they had tongue today, which seemed unusual, so I ordered it, but it was very, very tough. Not to my taste. The drawbacks are that, although there is ventilation, there's no duct above the stove, so the breeze pushes the smoke around and fills the room, and there are no noodles, only rice.

You can enjoy ジンギスカン marinated in salt sauce. You can dip it in 3 kinds of salt, and it was very delicious. We also had unusual items such as ジンギスカン ham. They operate as a ramen shop during the day and a ジンギスカン restaurant at night. There is ramen at night too, but unlike during the day, you can have tsukemen with a dipping broth made only from salt and kombu.

I booked in advance, but was told, 「Our meat supply is unstable, so please let us make this a tentative reservation. If no meat arrives, we'll contact you that day」. Since I didn't hear anything that day, I went at the reserved time. They said they had lamb dishes and a little mutton, but no offal dishes. Each piece of lamb is thick and fairly large, so it feels more like yakiniku than ジンギスカン. The unseasoned raw lamb has no gaminess at all and just the right bite. Sprinkled with salt, it tastes light enough that you feel you could keep eating it endlessly. The ネギ塩ラム is seasoned with sesame oil and salt. You keep the green onions aside while grilling, then put them on the meat once it's cooked. The seasoning of the green-onion garnish is exquisite, and this also feels like something you could eat endlessly. But since you have to keep the green onions aside while grilling, wouldn't it be better to serve them separately? It's a ramen shop during the day, and there was ramen on the evening menu too, so I tried to order it, but was told it had sold out during the day. That was disappointing.
